May Challenge–Save money and eat at home for the month.
Every time I start looking at my budget, I always seem to find the hole my money is leaking through — It’s dining out. Just this past month I spent $264 on dining out with the majority being at fast food places. That realization is disgusting for two reasons.
1. It’s horrible for my health and fast food is possibly the worst food to put into my body.
2. It’s bad for my budget.
So, after a much needed, wonderful Mother’s Day brunch at The Carillon on Sunday, I’ll be putting my body and my budget on a diet for the rest of the month by eating only meals prepared by myself.
The goal is to not only stop that slow leak in my monthly budget, but also to get back in touch with the foods I’m putting in my body. The convenience of fast food and prepackaged foods can’t be an excuse for a lack of planning and time. I must make the time. It’s best for me and my family.

Some staples at our house include chicken rice with stir-fry veggies (cooked like fried rice but with less butter and oil), tilapia with couscous, pasta with homemade sauce, or grilled chicken with some kind of vegetable. We eat those a lot because they’re inexpensive combinations, and none of them take more than 30 minutes to prepare. Plus, if there are leftovers, lunch seems like it’s free!
